Event Description

Winter Minestrone with Cavalo Nero & Ricotta Pesto

This warming and satisfying soup brings a welcome start to a new year using seasonal veg with which we will make a lovely winter pesto. The beauty of this dish is that the vegetables are more or less interchangeable, the secret to it is the beans!

Ingredients 

Serves 6, can reduce by half but freezes well

Large jar or 2 tins cannellini beans (approx 600g) 

1 medium red onion

1 head celery

3 garlic cloves

Small bunch parsley

2 medium potatoes

3 large ripe tomatoes, or a tin of plum tomatoes, juice drained

2 courgettes

50g peas

50g broad beans 

100g green beans 

1l chicken stock (or vegetable)

Bunch Swiss or rainbow chard 

60g Parmesan, for grating  

2 tbsp olive oil 

20g butter

For the Cavalo Nero Ricotta Pesto

2 bunches basil

1 bunch Cavalo Nero (black kale)

1 head garlic

50g Parmesan 

100g ricotta

5 tbsp olive oil

1/2 lemon 

25g pine nuts, toasted

Meet the Host, Kitty

Kitty is a classically trained chef specialising in vegetarian food and celebration cakes.  She lives and works in London running cookery classes, private catering events and dinner parties.

Preparing for the Event

For the best experience, you will need to have Zoom downloaded onto your computer. Please ensure you're connected to broadband/wifi rather than using your mobile phone connection (3G/4G).

We also recommend that pets are either calmly sitting on your lap or in another room, and any refreshments you may require are within your reach!

If a recording’s available for the event, you can still register for it and we will send you an email with a link to a recording shortly after it ends.

Will my camera be on and will I be visible to the other people?

Your camera and microphone does not need to be on for you to enjoy your Mirthy event. The choice about whether to do this is completely yours.
