Event Description

As the seasons change and evenings get colder and darker, we start to move away from the lighter summery dishes as we crave unctuous and comforting bowls of goodness. This delicious stew is full of warming spices, and with the sparky tang of lime and cooling cucumber yogurt, makes for a lovely transition into Autumn.

We encourage you to cook along - Kitty will be going at a manageable pace and you will be able to ask questions throughout as you cook. Here is a list of the ingredients needed:

Serves 4

Ingredients:

250g cooked black Beluga lentils (Can easily buy these tinned)

1 tbsp olive oil

1 tbsp butter

5 shallots

4 garlic cloves, sliced

1/12 tsp ground cumin

1 tsp ground turmeric

1 tsp paprika

1 tsp ground cinnamon

1 tsp coriander seed

1 tsp cayenne pepper

1 red pepper, diced

1-2 red chillies

1 tin chopped tomatoes

200g baby spinach

400g butternut squash and aubergine

400ml coconut milk

1 tbsp tahini

1tbsp honey

2 lime

3 tbsp soy sauce

200g Greek yogurt

1/2 cucumber

4 tbsp rice vinegar (or lemon)

2 tbsp extra virgin olive oil

1 tbsp Nigella seed

2 tbsp coriander or parsley to serve

Ingredients for flatbread (makes 8 flatbreads):

250g self raising flour

250g Greek yoghurt 

Pinch of salt

Clarified butter approx 50g

Small sprig of Parsley

Meet the Host, Kitty

Kitty is a classically trained chef specialising in vegetarian food and celebration cakes.  She lives and works in London running cookery classes, private catering events and dinner parties.

Preparing for the Event

For the best experience, you will need to have Zoom downloaded onto your computer. Please ensure you're connected to broadband/wifi rather than using your mobile phone connection (3G/4G).

We also recommend that pets are either calmly sitting on your lap or in another room, and any refreshments you may require are within your reach!

What if I can’t make the event?

If a recording’s available for the event, you can still register for it and we will send you an email with a link to a recording shortly after it ends.

Will my camera be on and will I be visible to the other people?

Your camera and microphone does not need to be on for you to enjoy the event. The choice about whether to do this is completely yours.

How do I watch the live event?

Rest Less events are hosted on Zoom, a computer application that allows you to attend online events just by clicking a link. For detailed instructions, please go to our "FAQ" page, which you can find a link to in the nav bar at the top of the page.

How do I sign-up for and access the recording? (Recorded events only)

Book the event as normal (as if you are attending live). After the event ends you will automatically receive a post-event email with a link to the recording, as long as the event was recorded. You do not need to do anything else and there is no separate booking process for recordings only. Please note it can take up to 24 hours for Zoom to process recordings.
